USA Rice in joint seminar with Aramark

USA Rice organised a seminar and interactive workshop earlier this month for Aramark chefs from across Scotland.

Aramark have approx 100 outlets in Scotland overseen by Mike Ball, Operations Director. More than 60 catering managers, chefs and head chefs attended the seminar held at Motherwell Catering College.

Gerard O’Sullivan, Aramark’s Development Executive Chef, led a team demonstrating 6 recipes using American Long Grain and Wild Rice. These included Joloff Rice, Green Rice Salad and Vegetable & Rice Soup. The workshop gave the chefs and managers an understanding of the versatility, consistency and quality of American rice and how economical it is when used in food service.

The 60 attendees then broke into 6 teams of 10 and in an interactive workshop, created their own recipes using American rice inspired by the recipes demonstrated by O’Sullivan and his team. The teams also had to cost their dishes and prepare thoughts on how they would promote them.

A recipe booklet showing the recipes demonstrated was produced and, along with other USA Rice literature and giveaways, was handed out to all the attendees.
