Anthony, who has joined after spell of over three years with Compass Group, said: "It's a real challenge. Because of the nature of the business and its recent history of acquisition, the purchasing function had become somewhat fragmented. It's clear that it needs to be centrally managed - basically, I've been invited to formalise the purchasing process. I have the unique opportunity to impose my own standards and create a purchasing function using the buying knowledge and experience I have gained over the past eleven years in a trading environment."
